STRAWBERRY-BEET SALAD

a delicious and incredibly quick salad. Although they are completely optional, I couldn’t resist adding thinly sliced, steamed sweet beets. The tart and sweet strawberries and cherry tomatoes are this dish’s flavour standouts. The sauce will undoubtedly grow to be one of your favourites. I truly detest pre-made raspberry vinaigrettes, but this homemade version is absolutely delicious. It’s made with raspberries, champagne vinegar, lemon thyme, fresh lemon juice, a little salt, honey, and, of course, olive oil.

I enjoy a nice salad, but not one that consists only of melancholy iceberg lettuce and tasteless canned tomatoes. Even if you don’t want to prepare this salad, you should still shake up some of that dressing I made because it’s delicious. Honey, thyme, champagne vinegar, and fresh raspberries are a winning flavour combo. This salad can be altered in any manner you like, so long as the raspberries and vinaigrette are retained. You can use your preferred salad leaves, add toasted pecans or almond slices, or toss in some homemade croutons. If the components are fresh, it can’t be bad.

When in season, nothing beats cherry tomatoes. Together with nuts and avocado, they create a fantastic salad.

I’d be fully satisfied if you served this alongside my french bread and bowl of curried butternut squash soup.
White wine vinegar can be substituted for champagne vinegar in a pinch.

There’s no lemon thyme? It’s also acceptable to use regular fresh thyme.

RASPBERRY-BEET SALAD RECIPE

  • Beets need to be steamed at a rolling boil in a double pan for about 30 minutes, or until tender. After it’s cooked through, it can be peeled off in cool water. Cut up and throw into the lettuce.
  • Preparation time! Mince up some fresh lemon thyme. Put the mixed greens in a bowl and arrange the rest of the salad components on top.
  • Put the vinegar in the mason container.
  • Add the lemon thyme that has been minced.
  • The dish needs seasoning.
  • Blend in some blackberries.
  • Make avocado slices.
  • Put some olive oil in it.
  • Shake up the sauce. Apply the dressing to taste and toss the lettuce.
