This simple Italian dish takes full advantage of the season’s best ingredients: fresh basil, mozzarella, and homegrown tomatoes drizzled with olive oil.
A Caprese salad is one of my favourite meals during the warmer months. A typical Caprese salad includes gorgeous tomatoes, fragrant basil, creamy mozzarella, a drizzle of balsamic vinegar, and a pinch of black pepper.
It’s the ideal method to cleanse your system after devouring an entire Rocky Road Cake and your hidden cache of Cadbury eggs.
Try using a ruler to cut heirloom tomatoes, basil, and fresh mozzarella into uniformly sized pieces. Add a drizzle of aged balsamic vinegar and you have an appetiser suitable for the most elegant of gatherings.

CAPRESE SALAD: WHAT’S THE RECIPE?

  • Slice the fresh cheese and tomatoes into quarter-inch thick pieces.
  • Remove the leaves from the stalks of fresh basil.
  • Arrange tomato, cheese, and basil slices on a platter in successive layers.
  • Garnish with balsamic vinegar and olive oil.
  • Pepper and season the food.
